The label as a development deliverable, not an afterthought

Why the label waits for the formula
Every number on the back panel is a function of the recipe. Change the sugar, and the panel changes. Change the vinegar, and the ingredient order may change. Change the fill weight, and the servings per container changes. Teams that design artwork early usually pay for it twice. Print is still a quoted cost with a price break table behind it, which is why label printing belongs in the first round of supplier quotes even though the artwork is not ready.
Lock the formula at the pilot gate, then start the label. Keep the version number of the formula on the artwork file, so the two never drift apart.
Where nutrition numbers come from
Analytical accuracy in food testing rests on reference materials. NIST's program on measurements and standards to support nutrition labeling describes food matrix Standard Reference Materials developed to help laboratories comply with nutrition labeling laws, provide traceability for exports and improve label accuracy, with more than thirty such materials available including infant formula, baby food, meat homogenate, peanut butter and food oils. When you send a sample to a laboratory, the credibility of the number you get back depends on work like this.
That has a practical consequence. If two laboratories give you different answers, the question to ask is what reference materials and methods each used, not which one you prefer.
Disclosure duties depend on your size
Requirements are not identical for every business, which is why copying a larger competitor's label is a bad strategy. AMS explains in its information for regulated entities that the bioengineered food disclosure standard applies to food manufacturers, importers and certain retailers, that very small food manufacturers, defined as those with annual receipts below 2.5 million dollars, are exempt from its requirements, and that food served in restaurants and similar retail establishments is exempt as well.
Read that as a general lesson. Establish which rules apply at your size and in your channel, in writing, before you commission artwork.

Build the checklist into the project plan with owners and dates, the same way you would treat a piece of equipment. The label has more dependencies than any other launch item, and it is the only one that is visible to a regulator on day one. Leave physical space on the artwork for the lot code and the date. Retrofitting that space onto a printed label is a familiar and avoidable annoyance. One row on the list cannot be filled in by anyone else, since the storage instruction comes out of your own shelf life study rather than a competitor's label.
